Elderberry Syrup

  • SANFI Freeze-dried elderberry powder: 2 or 3 tablespoons (about 12-15 grams)
  • Water: 1 cup (8 fluid ounces or 240 ml)
  • Honey (raw, local preferred): 1/2 cup (about 170 grams or 120 ml)
  • Ground cinnamon: 1/2 teaspoon
  • Ground cloves: 1/4 teaspoon
  • Fresh ginger (optional, for added flavor): 1 teaspoon, grated (or 1/4 teaspoon ground ginger)

Instructions

  • Rehydrate the elderberry powder:
  • In a saucepan, on medium heat, combine 2 to 3 tablespoons of freeze-dried elderberry powder with 1 cup of water.
  • Stir well to ensure the powder is fully dissolved.
  • Add spices:
  • Add 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, and 1 teaspoon grated fresh ginger (if using) to the saucepan.
  • Simmer the mixture:
  • Bring the mixture to a gentle boil, stirring occasionally.
  • Reduce the heat to low and simmer for 10 minutes, allowing the flavors to meld and the mixture to reduce slightly. The liquid should reduce by about 1/4 to 1/3, leaving you with approximately 3/4 cup of liquid.
  • Strain (optional):
  • Strain the mixture through a fine mesh strainer or cheesecloth into a clean bowl or measuring cup. If you’re fine with a slightly textured syrup, you can skip this step.
  • Add honey:
  • Let the mixture cool to lukewarm (below 110°F/43°C to preserve the honey’s beneficial properties).
  • Stir in 1/2 cup of honey until fully dissolved. This will bring the total volume close to 8 ounces.
  • Bottle and store:
  • Pour the syrup into a clean, sterilized 8-ounce glass bottle or jar.
  • Seal tightly and store in the refrigerator for immediate use.
